Recipe: Bone Broth

Winter is the season for soups and broths! While bone broth can be enjoyed anytime of year, its especially beneficial on cold winter days. Read on to discover the benefits of bone broth and find an easy recipe to make this delicious treat at home.

Western medicine shows that bone broth:

  • Provides vitamins, minerals and collagen

  • Benefits digestion and improves gut health

  • Supports immune function 

  • Reduces inflammation

Through the lens of traditional Chinese medicine, bone broth is largely associated with the kidneys, and therefore:

  • Improves sleep 

  • Reduces anxiety

  • Supports fertility 

  • Benefits jing (“essence”)


Ingredients:

  • 2 lbs beef bones (ideally a mix of marrow and knuckle, but honestly any beef bones will do)

  • 1 onion, cut in half, 1 head garlic

  • One 3 inch piece of ginger, cut lengthwise

  • 1-2 knobs turmeric root, cut lengthwise

  • 4-5 fresh shiitake mushrooms

  • 1 tbsp apple cider vinegar

  • 1 tsp black peppercorns

  • 1-2 star anise

  • 1 tbsp pink Himalayan salt

Instructions:

  • Boil bones in water for 20 minutes to help remove residue and make a more clear broth (optional step)

  • Place bones, ginger, turmeric mushrooms, onion, and garlic on a baking sheet and bake for 30 minutes @ 400 degrees.

  • Place all ingredients - l baked items, spices, and vinegar in instant pot - fill water to max line.

  • Cook for 3 hours on high in the instant pot.

  • After you let it cool for a bit, strain broth and place in mason jars or pyrex glass containers - continue to cool outside before putting in the fridge or freezer. Fat will collect on top when cooled and can be removed before drinking. Freeze (long term) or refrigerate (5 days or less) to store.

  • Reheat before enjoying.
